What I Eat in a Day 02/2019

Changing my diet was a huge part of my healing. First thing I did was jump on my computer and frantically searched the web for recipes. To be honest I didn’t even know what I was looking for. I just searched for recipes that were vegan (I thought vegan meant HEALTHY) and had a variety of vegetables. Basically I would make each recipe and cross my fingers each time. Hoping I’d somewhat like them.

It was Not Going as I Planned

This experiment of trying different recipes went on for a couple of weeks. Sadly, none of them genuinely satisfied my tastebuds. Feeling frustrated and broke I decided to completely stop. Those recipes were a big expense and I no longer had the money to continue purchasing that amount of food. Plus I just didn’t have the time and energy to prepare them. That task became way too exhausting and I felt like it was wasting my energy. I couldn’t afford that. If you are like me and suffer with terrible fatigue, you can understand where I’m coming from.

The Struggle was Real





An additional challenge I dealt with was making separate meals for my husband. I struggled with trying to prepare meals for myself and making a separate meal for him. It was pretty challenging to prepare 2 meals. At that time my husband was not interested in eating the meals I was making for myself.

All of this just started to pile up, striping away every ounce of energy or time I had. The effort I was putting in began to out weigh the healing I was looking to experience. I needed to rest, I needed to lie down, brain fog was making it impossible to navigate through all of this.

Believe it or not, the challenge turned out to be a positive experience. It actually forced me to be resourceful and to eat simple meals. This in turn helped to lower my food expense and it saved me a ton of time.

I made this “what I eat in a day” video to show an example of how simple I keep my meals. You will see I do not put in a lot of time or effort and the meals are only a couple of ingredients.

  1. Thank you Tara. Great informative vid!! When you have experienced bloat, can you give me an example of how much fruits and vegetables you lowered?
