Creamy Vegan Ranch Mashed Potatoes

Vegan Ranch Dressing (my version)
Ingredients:
1 cup of raw cashews
1 1/2 tsp of onion powder
1 1/2 tsp of dill
1 1/2 tsp of dried parsley
1 medium sized clove of garlic
Juice from 1 small lemon or 1/2 of a medium lemon
1 1/2 – 2 cups of water (depending on how thick you want the dressing)
sea salt to taste





Instructions:
Soak raw cashews in water for at least 1 hour. This will allow it to soften and create a creamier dressing. You can omit this step but it will be a little more grainy in texture.

Drain the water from the cashews and add them to the blender. Add all other ingredients and blend until smooth.

Now Set the dressing aside while you make the mashed potatoes.

Mashed Potatoes
Wash and peel as many russet potatoes you would like. Cut them into 2 – 2 1/2 inch pieces to help decrease the cooking time. Place them in boiling water and let them cook for about 15-20 minutes or until you can easily put a fork in them. Drain the potatoes from the water and smash them using a fork until there are no chunks left. Once that is done add some of the vegan dressing until it is fluffy, smooth, creamy, and perfect to your liking!!!
