Thank you to a dear friend of mine who sent me a link to this recipe from Tastemade. These are the easiest and fastest cookies to make. They are vegan, gluten free, oil free, nut free and they contain no refined sugars. These aren’t your typical crispy cookies but the flavor is absolutely delicious. The texture is soft, almost like a banana bread. I love these convenient snacks they make it so easy to just them grab and go.
2 Ripe Bananas
2 cup Gluten Free Oats
1/2 cup non sulfured, no added sugar raisins
1/4 teaspoon cinnamon
Preheat oven 356 F and bake for 20-25 mins
First mash up the bananas until there are no chucks. Then add all other ingredients and mix. Divide the batter into 4 parts and place each one on a cookie sheet lined with parchment paper. The batter is sticky so carefully form them into round mounds and flatten each one to form a cookie shape. Bake at 356F for about 20-25 mins.
